HONG KONG: Originally from Spain, new ROKA Hong Kong head chef Oscar Luzon de Arcos was trained at three Michelin-star restaurant El Celler de Can Roca, which has been voted The World’s Best Restaurant of 2013.
De Arcos was first introduced to Japanese cuisine by the restaurant’s Japanese salad chef, and from then his fascination and passion for Japanese cuisine grew.
His mentoring continued at zuma London under executive chef Yoshi Muranaka, one of the world’s most celebrated Japanese chefs, learning that “a true chef must never stop experimenting in order to create delicious and exciting new food.”
As head chef at Hong Kong’s contemporary Japanese restaurant ROKA, de Arcos has brought a range of new refreshing dishes to the menu.
His passion for robata lies with its strong flavours and endless possibilities of marinades. As head chef, de Arcos is able to create unique Japanese dishes with his own twist, and with this, he combines the core principles of Japanese cooking – respect, technique, product and discipline.
ROKA Hong Kong is part of an international Japanese restaurant brand originally launched in London in 2004 by award-winning chef and co-founder Rainer Becker.
